Blueberry-Yoghurt Muffins  
2 cups all-purpose flour
1/3 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
¼ teaspoon salt
¼ cup unsweetened orange juice
2 tablespoons vegetable oil
1 teaspoon vanilla extract
8 oz low fat yogurt
1 egg
1 cup fresh or frozen blueberries, thawed
vegetable cooking spray
1 tablespoon sugar

Combine first 5 ingredients in a large bowl; make a well in center Of mixture. Combine orange juice and next 4 ingredients; stir well. Add to dry ingredients, stirring just until moistened. Gently fold in blueberries.

Divide batter evenly among 12 muffin cups coated with cooking spray; sprinkle 1 tablespoon sugar evenly over muffins. Bake at 400° for 15-18 minutes or until golden. Remove from pans immediately, let cool on a wire rack. Yield: 1 dozen, (serving size = 1 muffin)
